Koji producing apparatus



PROBLEM TO BE SOLVED: To eliminate the problem of nonuniformity of a koji as a product resulting from difference of growth of Aspergillus oryjae caused by change in conditions depending upon positions of koji layers being transported on conveyors. SOLUTION: In this koji producing apparatus in which a first and a second conveyors 5 and 6 are adjacently arranged in parallel and inclined mutually in the opposite directions are installed. A koji is transported from one conveyor 5 or 6 to the other conveyor 6 or 5 and koji layers on the conveyors 5 and 6 are ventilated, the transporting positions of the koji layers are thermally shielded by heat insulating materials 15 in each of the conveyors 5 and 6 and the bottom sides of the conveyors 5 and 6 for transporting the koji layers are divided into plural sections 46. The sections 46 are equipped with air distributing pipes 47 for sending air from air sending blowers 49 to the koji layers and with temperature sensors 14 for detecting koji temperature in the sections 46 and the air-sending blowers 49 are provided with sending air controlling means by signals from the temperature sensors.
